Recipe: Simple & Delicious Fish Tacos

Made with simple ingredients and techniques even the beginner home chef can apply, these street tacos are delicious and pair nicely with Fable Brewingâs Goldilocks blonde ale.
Ingredients
For the pickled onions
Sliced onions
Red wine vinegar
For the slaw
8 oz mayonnaise
2 tbsp apple cider vinegar
2.5 tsp garlic powder
1 tbsp paprika
Hot sauce to taste
2 cups of shredded cabbage/bagged coleslaw mix
Pinch salt
1 tbsp chopped parsley
For the fish
6-oz fillet of mahi mahi or other steak-like white fish
High smoke point oil such as canola or avocado
Old Bay seasoning
For the tacos
Corn tortillas
Chopped chives
Instructions
Optional: Make pickled onions as a topping.
Combine sliced onions with a little red wine vinegar and let sit overnight.
Make the slaw (up to 24 hours ahead)
- In a medium mixing bowl, add the mayonnaise and apple cider vinegar and stir until smooth.
- Add the garlic powder, paprika, and hot sauce and stir well.
- Add the cabbage, salt, and parsley, stir well, and let sit, refrigerated, up to 24 hours.
Cook the fish
- Rub the fish with a few drops of avocado oil.
- Sprinkle both sides and ends generously with Old Bay.
- Heat a skillet over medium-high heat. Add 1 tbsp oil and heat until hot.
- Cook the fish on one side. As you cook, youâll notice the edges start to turn opaque. Cook until this opaqueness reaches the center of the fillet. Flip and continue cooking until the edges of the fillet are fully opaque.
- Shred the fish with two forks. While you shred, heat the tortillas in a pan or spread them out on a sheet pan and cook in an oven set to 325° just until pliable, only about 1-2 minutes.
- Make your tacos. Start with meat, cover with coleslaw and chives, and add pickled onions if desired. Donât overstuff your tacos!
- Pair with a refreshing beverage such as Fable Brewingâs Goldilocks Blonde Ale or a glass of strawberry limeade.
